Vegetable Lo Mein

Try out this Asian inspired dish.  Add any of your favorite vegetables to stir-fry.  Delicious and nutritious. Try garnishing with 1 tablespoon of toasted hemp seeds.

Vegetable Lo Mein

Try out this Asian inspired dish.  Add any of your favorite vegetables to stir-fry.  Delicious and nutritious. Try garnishing with 1 tablespoon of toasted hemp seeds.

Ingredients

Serves 4

  • 8 ounces whole wheat spaghetti (or gluten-free spaghetti)
  • 1 cup fresh vegetable broth (or no salt added vegetable broth) 
  • 2 tbs low-sodium soy sauce (or soy-free soy sauce) 
  • 2 tsp honey
  • 1 tbs cornstarch
  • 1/2 tsp red pepper flakes
  • 1 tbs toasted sesame seed oil (or canola oil) 
  • 16 ounces mixed stir-fry vegetables
  • 1 shallot (or 3 scallions), chopped
  • 1 tbs minced garlic
  • 1 tbs minced ginger (or 1 tsp ground ginger) 
  • Pinch of kosher salt (or omit if needed) 

Directions

  1. Combine spaghetti and water in a pot then bring to boil.  Once the spaghetti is cooked, drain then set aside.   
  2. Combine broth, soy sauce, and honey in a small bowl.  Whisk until dissolved.  Add the cornstarch and whisk well.  Last, add in the red pepper flakes then stir and set aside. 
  3. Heat Wok on medium high heat then add the oil.  Heat the oil until it is almost smoking.  Add your vegetables, shallots then cook for approx. 2 minutes.   Add the garlic and ginger, then saute for approx 2 minutes.
  4. Next , toss in the pasta and cook until heated through.
  5. Add the broth mixture and let it simmer, stirring often, for approx. 4 minutes until the sauce has thickened. 
  6. Now serve.
