Twice Baked "Potato"

This diabetic-friendly recipe is low in carbs and delectable.  You won't believe the secret ingredient that make it such a low carb dish. 

Twice Baked Cauliflower
(Makes 8 servings)


1 large head cauliflower **Secret Ingredient**
4 oz. low fat cream cheese
1/2 cup low fat sour cream
1/4 cup minced green onions
1/4 cup freshly grated Parmesan cheese
6 slices bacon, cooked until very crisp, fat blotted and then crumbled *For a Vegetarian meal omit the bacon use vegan bacon bits*
1 cup reduced fat (2% milk) sharp cheddar cheese


Preheat oven to 350F.  Cut off stem and core from the cauliflower, and cut into small pieces.  Cook in large pot of boiling water until cauliflower is tender, but not overly cooked.  Soggy cauliflower will not work well with this dish.  Drain well and mash with potato masher, leaving some chunks.  Mix in the light cream cheese, light sour cream, green onion, Parmesan, and 3/4 of the crumbled bacon.

Spread evenly in a medium-sized glass casserole dish.  Sprinkle with low-fat cheddar cheese and the rest of the bacon.  Bake 30 minutes, or until hot and bubbly.
