Strawberry Sprinkle Pancakes

What a delicious way to celebrate Valentine's Day for breakfast.  It is very sweet and a hit for the kiddos.


  • 1 Cup Great Value Extra Fluffy Pancake Mix
  • 1 Cup Buttermilk
  • 1 Large Egg
  • 1 Tbsp. Light Olive Oil
  • 1 Tsp. Vanilla Extract
  • 1/3 Cup Sprinkles, plus more for garnish
  • 1 Handful Organic Strawberries, cut into dices
  • Vanilla Icing



In a large (or medium) mixing bowl combine pancake mix, buttermilk, egg, olive oil, vanilla, and sprinkles. Mix well.  The mixture should be kind of thick, but not soupy.  Next you can spray the griddle with non-stick spray.  I used Butter flavored.  Take a 1/4 cup and scoop out mixture.  Pour (3) pancakes or more if you can onto the griddle.  ***If you do not have a griddle, you can use a skillet.***  Add diced strawberries.  Flip the pancake to cook on the other side.  Serve hot.  Take a small cookie scoop of vanilla icing and place on top of pancake stacks.  Then add sprinkles for garnish.  This should make 9 pancakes (three pancakes each, serving size).

This is how the pancakes looked served.  We made them with and without strawberries.  One of the family members do not eat strawberries.
