Protein Pancakes

These delicious pancakes are packed with protein for all of you looking to boost your protein intake.  To make it fun I created a cross pancake.

Protein Packed Pancakes

Ingredients

  • Pancake batter (or pre-made pancake mix)
  • Everlast Nutrition Vegan Protein in Light Vanilla Flavor
  • Egg (or egg replacement)
  • 1 tsp. Vanilla
  • 1 tbs. coconut sugar

Directions

  1. Mix all ingredients in a medium bowl.
  2. Preheat skillet or griddle.
  3. Spray skillet with coconut oil (or oil of choice).
  4. Pour batter to desired size pancake.
  5. Cook on both sides until golden.
  6. Voila! Topped in photo with Strawberry-Blueberry infused (sweetener of choice).
