These pancakes are low in calories and full of nutritional yum. Once you've tried this recipe out, you will never make traditional pancakes again. We thought so ourselves!
- 1 - Banana (preferred with brown spots)
- 2 - Eggs
- 1 - Cap full of vanilla extract (or tsp.)
- 10 - Almonds
- Dash of cinnamon
- Extra Virgin Olive Oil (Spray or enough liquid e.v.o.o to coat pan)
Put all ingredients into a blender. Blend on low until the ingredients are completely blended. Use Extra Virgin Olive Oil on griddle (or skillet). Cook on medium heat for 10-15 seconds on each side or until batter starts to bubble. The goal is to have golden pancakes. Serve alone or with a side of your choice.
