We are in love with the Caesar Salad. We then decided to try making our own Caesar Dressing. It was delicious. Hope you enjoy!
6 cloves garlic, mashed and minced
1 tablespoon Dijon mustard
1 tablespoon Vinegar
2 tablespoons plain non-fat Greek yogurt
1/2 cup extra virgin olive oil
Combine garlic, mustard, vinegar and two pinches of salt in a blender and mix thoroughly. Then you will add the yogurt and blend together to form a thick base. In a slow stream add the olive oil through hole in lid. Scrape dressing into a bowl and season it to taste using the salt, pepper and lemon juice.
***If you are wanting a saltier taste, try adding anchovy fillets to the dressing.***
