Broccoli Potato Soup

This delicious healthy soup is for those veggie lovers.  The flavors are phenomenal.

Ingredients:

Servings:  4

  • 1/4 cup red onion and shallots
  • 1/4 cup bell pepper
  • 1/4 cup tomatoes, diced
  • 2 tbs Earth Balance margarine (non-dairy) 
  • 3 tbs of cornstarch  
  • 2 cups potatoes, peeled, diced
  • 1 1/4 cup broccoli, chopped, steamed
  • 1 1/2 cup water (or vegetable broth) 
  • 1 cup cheese (dairy or non dairy) , shredded
  • 1 cup unsweetened soy milk (can use almond or cows milk)
  • 1/8 tsp black pepper
  • 1/8 (or dash) paprika
  • dash of salt (optional)  ***I cooked mine without the salt.***
  • Fresh parsley, garnish (optional) 

Directions:

1.  In a large saucepan, saute onion, shallots and bell pepper in margarine over medium heat until tender.
2.  Add cornstarch, pepper, salt (optional) and paprika. Stir until smooth.
3.  Add water (broth), milk, and potatoes, stirring constantly until it boils and thickens.
4.  Reduce heat; cover and simmer for 10-15 minutes or until potatoes are tender.
5.  Stir in cheese, tomatoes, and cooked broccoli.  Cook over low heat until cheese is melted and soup is heated thoroughly.
6.  Sprinkle individual servings with parsley (optional).
